Sometimes you don't feel like cooking or just want to grab some healthy yet yummy for your tummy. Afterall taste is what matters in the end.
And you've got those taste buds to try everything new. Try this Tomato Rice Recipe for this Sunday Brunch. This recipe just takes 15 minutes to cook, that you can make just with a handful of ingredients.
INGREDIENTS
● 1/2 cup rice
● 3 tomatoes
● 1 onion
● 2 garlic pods
● 1 tsp cumin seeds
● 1/2 tsp mustard seeds
● 1 curry leaf sprig
● 1 tsp red chilli powder
● 1/2 tsp turmeric
● 1 tsp coriander powder
● 1 tbsp coriander leaves
● 2 mint leaves
● Salt according to the taste
RECIPE
1. Wash the rice well. Add 1 cup of water to a pot along with rice. Cook until rice is perfectly cooked. It will take roughly 10 to 12 minutes.
2. While the rice is cooking, heat 2 tbsp oil in a pan. Add cumin seeds, minced garlic and curry leaves. Let them splutter for a few seconds.
3. Now add finely sliced onion and saute them until golden in colour.
4. Add one chopped tomato. Make paste of other 2 tomatoes and add it. Mix well and add salt as per your taste.
5. Now, add spices like turmeric, red chilli powder and coriander powder. Mix well and cook until the tomatoes are mushy and leave oil on the sides.
6. Lastly, add cooked rice and toss well. Cook for one last minute and switch off the flame.
Garnish the Tomato Rice with chopped coriander and mint leaves & its ready to serve hot!!!
You can serve it with raita or plain dahi. Or if you can do a bit more effort, than Sambhar will taste really good with it.
